Another wonderful weekend...



There was a lot that went on this weekend, but overall it was splendid!! Friday morning I picked Julie's mom up at the airport and then later that night I worked... just basically served hors d'oeuvres to the Friday Night Wine Tasters. Jess stayed the night with me. Can't go wrong with a slumber party! Saturday I worked for Julie (so she had some time to spend with mama Hansen) and relaxed with a southern belle book. Sunday we woke up to flakes of snow on the ground :( BUT, after meeting we had a house full of company. Julie tryed out her new pressure cooker. (roast complete in 30 min!) Deliciouso! The weekend continues though... tomorrow morning I am meeting Jess for breakfast at McKay's Cottage. Just another treat! The other day Amber sent me a recipe for the best chocolate chip oatmeal cookies so this evening I experiemented. Now I'm passing it on to you to try!! Have fun :)

Chocolate Chip Oatmeal Cookies
Ingredients:
1/2 cup butter (1 stick), softened
3/4 cup brown sugar, lightly packed
3/4 cup sugar
1 egg
1 T water
1/2 tsp. vanilla
1 cup oatmeal
1/2 tsp. baking soda
1 cup flour
6 oz. Ghirdelli chocolate chips (and yes, spend the extra $2 on Ghirdelli!)

Preheat oven to 350 degrees. Mix butter and sugars together. Add egg and liquids. Blend. Mix in dry ingredients. Spray cookie sheet. Place about 12-13 small balls on the cookie sheet. Bake 12-15 minutes- it is best to bake only 11-12 minutes, take out of the oven and let sit on cookie sheet for about 2 minutes before placing on cooling rack.

Serve warm out of the oven with a glass of milk. ENJOY!

NOTE: instead of spraying a cookie sheet, use this!
