Fudge Truffle Cheesecake



Sunday for company I made a Chocolate Fudge Truffle Cheesecake..... another new recipe! Very easy to make, and not to mention, but it looks great too. Slides right down after an Italian Spaghetti dinner. Company looked at me funny when they saw that I didn't take any. I HATE cheesecake, but from what I hear, I'm weird! Anyways, there were only 2 pieces left so I take that as a good review :)

Chocolate Fudge Truffle Cheesecake

Crust:
1 1/2 cups vanilla wafer crumbs
1/2 cup confectioners sugar
1/3 cup baking cocoa
1/3 butter, melted

Filling:
3 (8 oz) pkgs cream cheese, softened
1 can (14 oz) sweetened condensed milk
2 cups semisweet chocolate chips, melted
4 eggs
2 teaspoons vanilla extract
Whipped cream is optional

Combine all crust ingredients and press onto the bottom and 2 inches up the sides of a 9-inch springform pan; chill. For filling, beat cream cheese in a large mixing bowl until fluffy. Gradually add milk and beat until smooth. Add melted chips, eggs, and vanilla; mix well. Pour into crust. Bake at 300F for 1 hour and 5 minutes. (center will still jiggle slightly.) Cool for 15 minutes. Carefully run a knife between crust and sides of pan. Cool for 3 hours at room temp. Chill overnight. Just before serving, remove sides of pan. Garnish with whipped cream.

Yes, you're WEIRD!!! No wonder you don't have to worry about your weight!!! I think I've eaten a few too many cheesecakes in my day!!! Anyway...this cheesecake looks and sounds delicious!!! I just might have to try it...but I'd better invite someone for dinner or else Rob and I (mostly me) will eat it in no time...and then get sick because I have no willpower for cheesecake and maple bars!!!
