
Today I came home from gospel meeting and was in the mood for baking. Roxy requested that it be something with chocolate. Mom is telling me to stop baking (I think until after the wedding) so I think I won't be posting anymore recipes for awhile :(
Brownies
* 1 cup butter, softened
* 1 cup granulated sugar
* 4 large eggs
* 1 tablespoon vanilla extract
* 1 cup all-purpose flour
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 6 tablespoons unsweetened cocoa powder
With these cake-like brownies, you can whip up a frosting or just sprinkle powdered sugar on top for decoration.
Preparation:
Grease and flour a 9x13x2-inch baking pan. Heat oven to 350°.
In a mixing bowl, combine butter and sugar; beat until light and fluffy. Add eggs one at a time, beating after each addition. Stir in vanilla.
In another bowl, combine flour, baking powder, salt, and cocoa. Add dry mixture to the first mixture, stirring until blended. Spread in prepared pan. Bake for 20 to 25 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
Cool in pan on rack.

Wow R - how do you stay thin with all these goodies??? :) I am so excited for you and the upcoming wedding/honeymoon! J and I took a fab honeymoon (www.peterisland.com) and it was worth it!!! We love our memories of lounging in the warm sand chatting, reading, learning to windsurf and watching for wildlife. BTW - are those photos of your shoes posted below???
