Mother's Scones


This morning I decided to be a Julie and make scones! Just like Allyson's Kitchen! The great thing about scones, is that you can throw anything in the batter. I added fresh lemon juice and lemon zest and a handful of craisins.

Scones:

2 1/4 cups all purpose flour
1/3 cup sugar
1 Tablespoon baking powder
11 Tablespoons butter, cold
1 cup heavy cream
*optional*
zest of 1 lemon
juice of 1 lemon
handful of craisins

Vanilla Icing:

1 cup powdered sugar
1/4 teaspoon vanilla
1 1/2 Tablespoon water

Preheat oven to 375F. To prepare scones, whisk together flour, sugar and baking powder in a large bowl until well combined. Add butter. Using a pastry blender, blend butter into dry ingredients. Add cream; stir until blended. Turn out onto a lightly floured surface and knead lightly until a smooth dough is formed. Pat into a square and 1 inch thick. Cut dough into 16 triangles. Arrange 1 inch apart on silicone mat. Bake until lightly browned; about 15-20 minutes. To prepare icing, mix powdered sugar, vanilla and water until smooth. Drizzle over warm scones and serve.
